Using genetics to biofortify rice

Scientists from the US Agricultural Research Service and their collaborators are focusing on the genes in rice that regulate the uptake and storage of important minerals, in the hope of improving the nutritional value of important crop which acts as a staple food for approximately half the world’s population.

Biofortifying rice through plant breeding methods could result in new varieties with high concentrations of essential minerals, including zinc, iron, and calcium.

Rice is already packed with vitamins, minerals, and other nutrients, but some such as iron are lost when milling brown rice to produce so-called white rice.
