Fancy some seaweed shortbread?

Peter Adams, of the Agri-Tech Strategy team, has highlighted a project on "Sustainable Scottish Seaweed" in a recent blog, focussing on the cultivation of native wild seaweeds (Ulva, ulva lactuca, and Palmaria, palmaria palmata, also known as Dulse) for use as food ingredients.

Mara, the Scottish Association of Marine Science (SAMS) and Otter Ferry Seafish company are collaborating in a new Agri-tech Catalyst project to find a sustainable method of cultivating Ulva and Palmaria onshore, whilst increasing both the quantity and quality of seaweed supplied, and lowering production costs. 

Interestingly, for the bakers amongst you, Peter also includes a recipe for seaweed shortbread!
